Sugar Free Blueberry Cheesecake

1 cup blueberries
2 tablespoons of erythritol
2 tablespoons lemon juice
5 tablespoons of water
16 ounces cream cheese
½ cup unsweetened powdered sugar
1 teaspoon vanilla extract
1 ½ teaspoons sugar-free powdered gelatin
1 cup cream

Make the crust. Let the dough set in the fridge.

In a saucepan over medium-high heat, combine the cranberries, sugar substitute, room temperature water (two tablespoons), and lemon juice.

While heating, use the back of a spoon or similar utensil to gently mash the cranberries while the ingredients heat.

Once the ingredients are mixed and the water has boiled, remove the pot from the heat and allow it to cool while you work.

Then, in a bowl, beat the cream cheese, powdered sugar alternative, and vanilla extract until creamy.

Once the ingredients in the pan are fully cooked, you can gently fold them into this mixture with a rubber spatula.

Now mix the cold water (three tablespoons) with the gelatin in a new, unheated saucepan.

Stir with a fork and let sit for a minute before placing this pan over medium-high heat to allow the gelatin to dissolve completely before removing from heat.

Let it sit for two minutes, then mix with the ingredients in the bowl until just combined.

Finally, in a new bowl, mount the cream until stiff. Note: For the cream to rise, it must be cold. Then fold into the cream cheese mixture with a spatula.

Remove the crust from the refrigerator.

Spread ingredients from mixing bowl evenly over dough. Place the cheesecake in the refrigerator to set (about four hours).

Serve with the optional dressing recipe.
